OT: What are you making for Super Bowl Sunday?

I'm actually boycotting SB because I'm a bitter 49ers fan. Golfing today but always fun hearing about yummy food.

 
Heading over to my mom and dad's but dad is smoking some ribs and other stuff on his big green egg. Always a good surprise from him!

 
roast, mashed potatoes, brown gravy,green beans with almonds & sauce and tea. AND white bread -YES

 
I haven't decided. It is cold here and getting colder. Considering making some very robust and spicy chicken tortilla soup.

Sorry about your 49's. I was torn in that game because there were Longhorns on both rosters, but I do really like Jim Harbaugh. I must watch the SB because of the Longhorns on the rosters, DBU! DBU! And Manning, what is left to say about Manning? Kudos to Elway for bringing him to Denver.

Teriyaki chicken nachos with homemade guacamole and pico de gallo with one bag of chips and cold gulf shrimp (in place of the chicken) with the same fixin's with the other bag of chips. Friends are bringing what they want to drink but I'll be having Cajun Mary's with Peppered Vodka and ice cold Rolling Rock.

Whatever my wife cooks. While I am watching the game, I'm sure chips and dip will be involved.

 
Overly lazy today and just don't feel like cooking so the wife and I have decided to head to Flemming's for the happy hour, it runs all night tonight.

 
Chicken Satay

Serves 16

Marinade:

4 Scallions, white part only

4 cloves garlic

1” piece of ginger

½ cup cilantro

1/3 cup vegetable oil

¼ cup lime juice

2 tbs soy sauce

4 boneless chicken breasts cut into ½” wide strips

Peanut Sauce:

2 scallions, white parts only

3 cloves garlic

1” piece of ginger

1/3 cup cilantro

1 cup peanut butter

½ cup coconut milk (or water, depending on preference)

3 tbs lime juice

1-2 tbs soy sauce (depending on taste)

1-2 tbs chili paste with garlic

Optional – 2-3 drops dark sesame oil, 1tbs dry sherry and/ or dash of rice wine vinegar.

16 bamboo skewers, soaked in water for at least 30 min.

For marinade, combine scallions, garlic and ginger in food processor and pulse to a fine chop. Add cilantro, oil, lime juice and soy. Puree. Transfer marinade to zip lock bag or non-reactive bowl. Add chicken and refrigerate for at least two hours.

For the peanut sauce, combine scallions, garlic, ginger and cilantro. Pulse to a fine chop. Add peanut butter, coconut milk, lime juice, soy and chili sauce. Blend ingredients until well combined. Adjust consistency by adding more coconut milk if necessary.

Preheat grill or grill pan. Thread each piece of chicken on an individual skewer. Grill, turning once, until chicken is cooked through. Serve with peanut sauce.

 
On my pit today I smoked the following:

10# pork loin, stuffed with crumbled bacon, Serrano and jalapeno peppers, sun dried tomatoes and cream cheese, wrapped with bacon.

I've also got some baby backs and country style ribs on the pit for a buddy.

I've got the loin resting and will slice it up when I get to the SB party in about 20 minutes.

Next time use the onion and chive cream cheese. You won't go to the regular cream cheese.
Actually cooked up some bacon to crumble into the filling. After I took the bacon out of the frying pan, I sautéed some fresh chopped onions and shallots in the bacon grease. Added that to the filling. Got the flavors in there, but with a bit of an uptick due to sautée.

Jeff that is a mighty fine piece of meat. Deb still talks about the BBQ you gave us when we was in Alaska. My friends y'all have a great week.
