Favorite Foods/Unique Eats

Not really. Dallas is a lot about conspicuous consumption so the smaller ones get crushed. My latest Dallas find was a killer Vietnamese place at Skillman/Oram. Five spice wings and pho that are a must.

Mot Hai Ba. In Dallas you also want to hit Urbano Cafe (next to Jimmy's which is another must, but for lunch). The Truck Stop next to Trader Joe's on lower Greenville is an idea that will be copied all over the country. It's that good of a concept. Head over to The Lot for a drink and find Johnny McBride. Old school Dallas restaurant guy (his family used to own El Fenix. He spent 20 years in NYC running Rosa Mexicana, amongst other restaurants). Ask Johnny what is going in in the Dallas restaurant world and you will know all the fun places to check out as well as all the fun, relaxed bars.

By the way, if you are a foodie and want an interesting side business in a big city, find some space and build a greenhouse. Raise fresh herbs year round. Go to restaurants and offer them a dependable supply of fresh herbs year round, delivered to their door. They can e-mail you what they need and you can package them in ziplock bags and have someone make deliveries. I have a friend in NYC whose wife does this and she makes insane money. Fresh herbs are the easiest way for a restaurant to add zing to their menu and they are willing to pay the incremental cost of them. Few employees, few customer service issues, not much time involved. If you have the space to do it, you can earn an extra thousand bucks a week for about 10 hours of work.

A hidden gem in Fort Worth is El Asadero. I stopped by there in the 80's instead of going to Joe T's (again). That has been my Ft. Worth staple ever since. Excellent milanesa. Whole, fried catfish. Salsa is delicious. People are great.

 
Any good steak houses in DFW besides the usual high end steak chains?
Not sure Bob's Steak & Chop House qualifies as a chain but it's solid. So is Old Hickory Steakhouse at the Gaylord Texas hotel.

 
The best uni I've ever had was at Commonwealth in the SF Mission District. Best kaiseki was at Kikunoi in Kyoto. Best scallops was a Valentine's special at Ad Hoc in Yountville. Best street food was from wandering around Tainan and Taipei. Best dim sum was the original Tim Ho Wan in Mongkok HK (lived up to its rep). I'm partial to both the Little Skillet fried chicken and the Ad Hoc fried chicken.

Best meal in a restaurant--probably Les Creations Narisawa in Tokyo, very refined. Close is Diverxo in Madrid, which picked up a 3rd Michelin star this year.

Favorite steak recipe: Momofuku Pan Fried Ribeye.

My go-to recipe to impress folks at dinner parties: Momofuku cherry tomato salad with silken tofu.

My standard potluck contribution: 12 hour pulled pork shoulder stuffed with garlic cloves with a side of Stubbs BBQ sauce.

The recipe I'm working on: Would like to really master steamed fish with ginger/scallions

Cookbook that takes too much time: Alinea (though I've made a few dishes out of it).

I really love lamb so hiking in Patagonia was amazing. The grilled meat was tasty everywhere.

My friend also recommend this restaurant. I'm going to Madrid in April. Now, is there a bar area to eat alone at Diverxo and do you need reservations?

We went in Sept of 2012 and got reservations for 4. I don't remember a bar area at all but we were on the far wall away from the kitchen.

He has a more informal restaurant in Madrid called StreetXo that looks a bit more lively/energetic and definitely has bar seating.

I was a big fan of Gladys Cafe in St. Thomas. I don't remember the exact dish, but I had some sort of mutton that was delicious.
