    That looks pretty amazing bro!  I'll try a water pan and fat side up on my next brisket cook; which should be Wednesday.  I'll post results.  Thanks @BruiseLee!

    I’m so done with all of this. OR shut down again for two weeks. WA for a month. CA has moved most counties to purple (the worst level) shutting down just about everything. CO has implemented a shutdown this week that has no end date. 
    The regulations associated with each of these states are contradictory in many ways, not with other states rather within their own regulations. . Restaurant industry is getting absolutely destroyed even though data suggests less than 1% of positive tests can be attributed to indoor dining. 
    I’m going to refrain from getting political on this, because this should not be a political discussion. The virus is real, but the restrictions make little sense.

    I’ve been getting better results with a water pan with fat side up and I definitely wrap with butcher paper.

    Looks amazing!  Do you use a water pan for your brisket?  Also, do you fat side up or down?  The best results I've had regarding brisket is no water pan and fat side down.  I've done some pretty amazing cooks but can honestly say I haven't had one jiggle quite like that.  Also, did you wrap or let it ride?  I tend to wrap in butcher paper when it hits the stall.
    I own a BGE (large) btw...
    And I agree with @J.B. TexasEx, we gotta see the ring bro! LOL!

    I have a KJ and although a bit pricey, I plan to keep it forever (hopefully).  One of the big advantages it has over the Green Egg is the number of accessories that already come with it and other accessories you can purchase later for it like a rotisserie.  They're also known for their lifetime warranty on the ceramics and have great customer service (although they initially had some issues when Covid hit).  One of the biggest advantages of the Kamado (Egg) is the versatility of cooks you can do.  You can smoke meats, but can also grill like a kettle and even get the temps up pretty high and make pizzas.

    All this talk makes me want to buy a new smoker.  The wife won't approve the expenditure at this point though....  Maybe next year.

    I wanted to share this with our community as it is something we support and we want to help children in our state's Foster Care system find the home and family they need and deserve.
    I'm asking you guys, the HornSports community, to tune in at 7:00 PM if you can, and enjoy the program (unveiling of the new Heart Gallery children, live music and more).  This isn't a pitch to receive donations because it is a virtual event - the goal is the spread awareness of the tremendous need that is out there.  It is a 30 minute event and can be watched on Partnerships for Children's Facebook or Youtube Channel.  Details about this are below.

    The grate is fine.  Usually it gets seasoned while using it, so I wouldn't treat that at all other than what you're doing, using a wire brush or scraper before each use. 
    I went the cover route too.  Same experience as you when I had the NB pit.  Hardly ever lasted through the winter.  My current pit is underneath cover in the ManPit, but not 100% out of the elements.  Usually sand it and paint it once every 5 yrs as needed.  Now really the only parts that need treatment are the firebox and the area on the outside of the pit closest to the firebox.

    Most experienced grillers seal their new pits so smoke or heat can't escape. I was a newbie when I bought mine.

    This was the last NB smoker that Academy had in the SA area, other than a demo. That was 15 years ago. I love it but it's a wood hog. I never took the time to seal it correctly.

    They ate basically the same; both are kamado style cookers; i.e. ceramic cookers known to for heat retention and even cooking.  With that said, I have a BGE. and I love it.  Full disclosure, it was a gift so cost hasn't been a factor.  With that said, the KJ does exactly the same thing and for similar price point you will get more accessories with it.  I have 2 very good friends who chose KJ over the BGE for this reason and they have no regrets!  As a matter of fact, the gasket on the KJ seems more durable and I'm considering going to that gasket the next time I have to replace the gasket on my egg.

    If you're looking for the convenience of a pellet grill but still want the traditional charcoal/wood flavor look into the Masterbuilt Gravity Series. They offer 2 different sizes (at $500 & $800, I think). I know they carry them at Premier Grilling and also at Ace I believe.

    The "rub" (pun intended 🤣) on a pellet smoker is that you sacrifice some of the traditional smoke flavor for convenience.  No doubt a pellet smoker is easy.  It really depends on what your budget is, what you are hoping to achieve and what your level of time commitment is.

    I'm not big on pellet smokers.  I have both a Weber Kettle and a BGE (large).  My family is 5 and use both pretty often.  If money isn't an issue go BGE.  Weber is dope tho and for less than $200 can't really be beat imo.  And I smoke meat on both of em btw

    I've had my smoker for about 10-12 years. I didn't know CharBroil bought them out as I haven't looked for a smoker since then. Mine is an all iron construction. No corners cut. I've been pretty happy with it.
